Wine-making:
- hand picked grapes, destemmed;
- uncrushed grapes fermentation in small stainless-steel tanks at uncontrolled temperature, with indigenous yeasts
- during fermentation pigeage done by hand at least 3 times a day
- 5 weeks on the lees before pressing and racking into large oak barrels;

Malolactic fermentation in the barrels, where the wine remains for a minimum of 12 months until bottling.
The Bauer team strongly believes in the potential of this variety in the Drăgășani area - a mold of its distinct origin and therefore a perfect fit with their "natural creativity" philosophy.
But Petit Verdot is more demanding and more difficult to care for compared to Cabernet Sauvignon for example. It ripens very late, making it difficult to get a perfectly ripe crop every year. This can force the team to abandon the crop altogether in a given year.
There are very few pure Petit Verdot wines in the international wine world, which makes Crama Bauer even prouder to offer the first and so far only Petit Verdot in Romania.
About the grape variety
Petit Verdot is a very old and very rare variety that can be found in areas planted with the better known Cabernet or Merlot varieties. Because of its distinct character (high acidity, firm tannins and spicy rather than fruity flavors) Petit Verdot is frequently used in small quantities to spice up red wine blends.
