  • Vineyard: single vineyard in Tarnave, Transilvania
  • Style: dry red wine, 14.5% vol. alc.
  • LIMITED EDITIONS: 2000 bottles

Wine-making:

  • hand picked grapes, destemmed;
  • uncrushed grapes fermentation in open wooden vats of 1500 litres with indigenous yeasts
  • during fermentation pigeage done by carefully over-pumping the must to obtain only ripe, smooth tannins and to avoid any harsh mechanical extraction
  • 6 weeks on skins and after the malolactic fermentation
  • aged for at least 15 months in 1000 litres wooden vats where they also do a battonage during the first 6 months.

Like all Bauer reds, this Pinot Noir will require some patience after bottling to develope and to show its real potential. For those who cannot wait we recommend a double decantation or an aeration in a carafe for at least 1,5 – 2 hours.

About the grape variety

Pinot Noir is a grape variety native to France. A really divine variety although very demanding in the vineyard and the cellar. It needs a perfect enviroment (soil, climate condition) and a lot of care to bring out its real potential. Pinot Noir is not for wine drinkers who like a lower acidity, a lot of extract and tannins as well as deep-colored wines. It is a very feminin variety with a lighter yet bright color, fine grained tannins and a crisp, solid acidity which adds to the wine's structure and juiciness. The key words for a good Pinot Noir are elegance and balance.

About the winery

The Bauer winery guides itself by character and authenticity. In all aspects of winemaking and vineyard cultivation, they strive to create perfect conditions so that their wines speak distinctly and convincingly. Balance, sustainability and understanding the connection with nature are the most important aspects for all the creations of the winemaker.

For Oliver Bauer, the true art of winemaking consists in understanding the personality of each variety and respecting the specific needs and expressions, as well as showing the amazing potential of Romanian varieties and the unique terroir. His goal is to do the right thing, at the right time and to the right extent.

How to store

When preserved correctly, wine can last for decades, even centuries, growing in value and quality. But poor storage can spoil even the greatest wines in the world. These are a few aspects you should keep in mind: Store Wine at the Proper Temperature; Store wine bottles horizontally; Protect wine from light and vibration; Store wine at the proper humidity; Store wine in a wine fridge, not a regular fridge; Serve wine at the proper temperature; Store open bottles of wine properly

How to recycle

Up to 90% of new glass can be made from recycled glass. If you’re getting ready for a night out on the town, drink consciously and remember to keep your empties and then bring to the bottle bank. If you’re hoping to leave future generations with a healthy-ish and useful environment, then recycling wine bottles is the way forward and it doesn’t take much effort.
